Hotel Asia Culinary Challenge returns for landmark 20th edition

The Hotel Asia International Culinary Challenge is returning in 2026 for its 20th edition, continuing its role as a major platform for culinary excellence, professional recognition and skills development in the Maldives.

Over the years, the event has grown beyond a cooking competition.

It now brings together chefs, students, hospitality professionals and young Maldivian talent to compete, learn, network and explore career opportunities in the local and international hospitality industry.

Organized by Maldives Exhibition & Conference Services Pvt Ltd (MECS), the 2026 challenge will be held from September 27 to 30 at The Maldives National University in Malé and the Synthetic Track in Hulhumalé.

The challenge will take place alongside the Hotel Asia Exhibition, which is scheduled for September 28 to 30 at the Synthetic Track in Hulhumalé.

Around 600 entries are expected across a broad range of culinary, pastry, artistic and beverage categories.

The competition will be judged by a 43-member panel of culinary, pastry, hospitality and food-safety professionals from the Maldives and overseas.

The judging panel includes 11 Maldivian judges, combining international culinary standards with local expertise and knowledge of the Maldivian hospitality industry.

For 25 years, the challenge has brought together chefs from resorts, hotels, restaurants, catering businesses, educational institutions and other food-service establishments.

It has developed into an important professional platform where chefs can test their skills, receive expert feedback and gain recognition from industry professionals.

The competition was introduced under the leadership of Project Director Chef Alan Palmer, who has been involved in every edition since 2002.

A Worldchefs Certified International Judge, Palmer has played a key role in the development of the competition and the growth of culinary professionals in the Maldives.

The event has excellent facilities, committed participants and a high-powered team of judges. It represents the pinnacle of culinary events in the Maldives. I am very happy to have been involved since day one and to witness the emergence of Maldivian cooking, the development of Maldivian chefs and the progress they have made over the years.

His continued involvement has helped establish the competition as a professional platform where chefs working in the Maldives can compete against formal standards and receive assessments from experienced local and international judges.

The challenge is designed to test the wide range of skills needed in a modern professional kitchen.

Competitors will take part in live cooking, pastry, artistic display and beverage categories while working under time limits and detailed competition requirements.

Entries will be assessed on factors including taste, technique, hygiene and presentation.

The 2026 program also introduces several new categories, giving chefs more opportunities to demonstrate creativity, contemporary culinary knowledge and practical restaurant skills.

The competition includes hot cooking categories covering fish fillet, beef, seafood, poultry, lamb, desserts, signature prawns, halal truffles and Singapore-style dishes.

Traditional and contemporary categories include Maldivian Dish, Asian Fusion Cuisine Challenge, Perfect Omelette and Egg Benedict Style, and the Burger–Low Waste Challenge.

Pastry and artistic categories include Decorated Cake, Fruit and Vegetable Carving, Artistic Showpiece, Bread and Pastry Display, Pastry Chef Challenge and Three Desserts Display.

The program also features the Team Challenge and a dedicated Young Chef category for competitors aged 25 and below.

Beverage competitions include Iced Mocktail, Tea Challenge and Cocktail Challenge.

Fish competitions remain a major feature of the challenge.

Competitors will use the same fish product to create around 50 different dishes, demonstrating how one ingredient can be transformed through different cooking methods, flavor combinations and presentation styles.

The format tests more than creativity and taste.

Chefs must demonstrate planning, speed, precision, cleanliness and adaptability while managing their own mise en place and following competition rules on ingredients and food preparation.

Food safety, waste management and professional kitchen practices are also key parts of the competition. Competitors are required to work safely and leave their workstations clean and organized.

Live cooking categories are particularly demanding, as chefs must prepare and plate multiple portions within strict time limits, often using designated sponsor ingredients.

Entries are judged on preparation, innovation, service, presentation, taste and texture, with taste and texture receiving the highest weighting.

This places emphasis on the overall quality and execution of a dish rather than its appearance alone.

The Burger–Low Waste Challenge also highlights the growing importance of sustainability in the hospitality industry.

Competitors are expected to make efficient use of ingredients and demonstrate ways to reduce waste by using trimmings, offcuts and secondary ingredients.

Techniques can include pickling, fermentation, dehydration and the creative reuse of ingredients in sauces, garnishes and seasonings.

The challenge has also become an important pathway for young Maldivian chefs.

Participants gain experience working under pressure, receiving feedback from experienced judges, following professional culinary standards and presenting their skills to hospitality leaders.

Several chefs who entered the competition early in their careers have since progressed into senior positions in the hospitality industry, including executive chef roles.

The event supports the development of young talent through its Young Chef category, the Most Promising Young Maldivian Chef — BBM Rising Talent Award, masterclasses with internationally recognized chefs and opportunities to interact with senior culinary professionals.

The Maldivian Dish category carries particular cultural significance.

Competitors must prepare a traditional Maldivian dish using only products produced in the Maldives while presenting it in a modern style.

The category gives chefs an opportunity to reinterpret local culinary traditions, showcase Maldivian ingredients and introduce the country's flavors to international judges and hospitality professionals.

As the Hotel Asia International Culinary Challenge reaches its 20th edition, the event continues to provide a competitive and educational environment for chefs while supporting the development of future culinary leaders and the wider recognition of Maldivian cuisine.
